Chicken parmagiana. I already made my homemade red sauce a few weeks ago and froze it. Yum! I'm just doing a quick light breading on the chicken tenderloins we have.

I think I'm making beans and rice with a side of asparagus...strange combo, I know. DH loves the beans and rice and I have to make the asparagus before it goes bad.
For quick and easy, we usually do Subway

When DH isn't home and I don't have leftovers or anything I usually either do pasta with olive oil, garlic and parmesan. Or a fried egg sandwich or hashbrowns with tomatoes, green peppers, mushrooms and onion. Or stir fry.

that is a quick way -- i've made it a few times before. i love it!
Our dinner last night changed...the spaghetti was just about done when we got a text from our friend Tommy saying to come over to his place right away for a "surprise". We figured he was engaged or something and told him we'd come over right after we ate. He said not to eat and to come over right away so we did and he had a massive seafood feast going on! Pounds and pounds of fresh shrimp, lobster tails and crab legs. Mmmmmm! It was HEAVENLY!
