This Saturday is Ava's dance recital, and it's at 10 a.m. I know Ava will want to visit with our parents afterwards so I figured I would feed them. I normally do an overnight egg and sausage casserole for brunch, but since the recital is at 10 and we'll be back home around 11:00 (it's a short program since the school is new and only has a few classes) I want the food to be ready to go when we get home, but that won't be possible since it will still need to go into the oven. Anyway, I have heard of these same type of casseroles being done in the crockpot, which would work great since I can leave it while we're at the recital.
I've looked up some recipes and they get mixed reviews. Has anyone ever done a brunch casserole in the crockpot? If so, how was it and how long did you cook it? They are basically bread, sausage, veggies, cheese, bread, sausage, veggies, cheese (layered) and then the egg mixture is poured over. It says to cook for 8 hours and some people have said that they burn when cooked for that long, while others gave the recipe a great review and didn't say that they altered the method. I'm torn about how long to cook it. I make my lasagna in the crockpot this way and 8 hours would definitely be too long, the noodles usually cook in about 3-4, so I considered doing the brunch casserole this way but don't want the egg to not be cooked thoroughly. Any ideas/tips about this?
Re: brunch dilemma
I hope Ava enjoys her recital! Make sure you bring your tissues! I was a complete bawl factory during Lily's first show. I was about to burst with pride.
