white wine subsitutions in cooking

I am making chicken picatta and don't have any white wine.  Chicken stock won't work, as there is already chicken stock in the recipe.  I have white rice cooking wine, port, marsala, vodka, white grape juice, cider vinegar and ginger ale.

What should I use?

  • I just use more chicken broth. If the recipe calls for 1/2 cup broth and a cup of wine, I just do a cup and a half broth. Works for me. 
  • You don't happen to have dry vermouth, do you?

    I would actually use marsala, might give it an interesting flavor, more like a chicken marsala, haha.

  • I would use vermouth if you happen to have it. My 2nd choice would be the white rice cooking wine
