i do a sliced steak salad over spinach with a balsamic dressing, you could easily do that with shrimp. i also love doing fresh whipped cream and berries (you could macerate them in balsamic if you have enough time). have fun!
Another idea. Last night I made a watermelon salad. It is basically watermelon, red onions, feta, olives, olive oil, and black pepper. It sounds nasty to me, but it is quite delightful.

Not fancy, but cherries, lots and lots of cherries. They are in the stores down here and they are SO good. I could eat a pound.
What about an olive tapenade and some fancy cheeses to eat on bread on a lovely cracker?

Lox (aka smoked salmon) and dill cream cheese on crackers?
Brie, brie, and more brie! You could bring a nice baguette and some quince paste too.
Strawberries are in season here.
Champagne!
