So I love eggs. I really really do. I love them poached. With a little truffle salt on toast. Or maybe poached over a pasta. Or poached in a soup. I like eggs poached. But I can't eat poached eggs right now. ![]()
What I don't love are scrambled eggs. I'll eat them, especially if cheese is involved. But I don't really like them.
Unfortunately, my goal is to eat an egg a day. But not poached. How do you prepare your eggs?

I like eggs scrambled and/or in omelette form. Sometimes I make them kind of like a frittatta w/some potatoes, spinach, other diced veggies. Then serve it w/cheese and Frank's hot sauce. SO YUM! Darn, I may have to make that this weekend!
I also love hard-boiled eggs. And you can make a few of those at a time, put them in the fridge and have ready for you whenever you want. Love them in salads!
Someone on Pinterest posted a link to Homemade Egg McMuffins. I don't normally like my eggs cooked that way but, for some reason, I don't mind in the McMuffins. Might be worth a try.
I didn't think you were supposed to eat the yolk uncooked.
You may want to clarify with your OB. As long as the yolk reaches a safe temp, you should be fine no matter the state of runny-ness.
It was a while ago, but while I was preggers, I aheared to every rule and don't remember anything about runny or poached eggs.
For pregnancy, I've been trying to eat 2 eggs/day (Brewers/Bradley diet). Since it's so many and I'm not a HUGE egg fan, I eat them hardboiled with salt on them. It's actually become kind of like a chore :P ...I sometimes will cut the two hardboiled eggs up and make an egg salad sandwich. My H hard boils a dozen eggs on Sundays so I have them for the week, and that's generally the only way I'll eat them every single day. That and French Toast
I like them scrambled. Or egg whites with spinach and feta cheese.
Love me some eggs benedict, but dont know who to prepare that for myself.
