NPR - what sides with chicken enchiladas

A friend of mine is coming over for dinner tomorrow. I was planning on making chicken enchiladas, but what should I serve with them? Black beans? Refried? Rice? Salad? Any ideas? Thanks!

  • We usually do a mexican/spanish rice as a side and chips with guacaomle and salsa to start with.

  • I usually make a really chunky guacamole so that it can be eaten with chips or as a salad by itself.
  • I like to do mexican beans & rice and sliced avocados & sour cream
  • I usually do rice, too.  I fry some corn (needs to drain for a while to be dry if you are using frozen or canned) in butter until they start popping (stir often).  Add some tomatoes, then s&p, cumin and dash of chili powder.  Add rice and coat well.
  • Thanks!! Guacamole sounds perfect and the recipe for the rice is exactly what I needed Aggie. Do you think i could make it tonight and reheat it? Or should i try to grow it together tomorrow when I get home from work? Thanks!!
  • It's OK reheated, but best the day of.  I'd cook the rice tonight and refrigerate it and throw it together tomorrow.  It's better if the rice is dried out a bit.  Del Monte makes a great Mexican stewed tomato, and I usually use that if I don't have fresh tomatoes on hand.  It tastes better with the stewed, but it has a lot of sodium.  If you use it, drain most of the juice so it's not so sloppy.
  • Perfect.  I have a rice cooker and my nanny will be here so she can turn that on.  Then I can just throw it all together.  Sending DH to the grocery store on his way home from work today so he can pick up all the ingredients for me then.

    We cube some avocados, chop some Roma tomatoes, finely dice some red onion and sometimes we will do a little garlic as well.  Then, we add salt, pepper and lime juice.  We do mix it pretty roughly so that we keep the chunkiness, but get a little creaminess to it as well.
