Crazy Cake Recipe (egg and dairy free)

For those who are interested here is an easy chocolate cake recipe that is also egg and dairy free.  It's really delicious and moist, I still make it even though we've grown out of the allergies.

Cake 

Ingredients: 3 cups flour

                  2 cups sugar

                  6 tbsp cocoa

                  3 tsp. baking soda

                  1 tsp baking powder

                   2 cups water

                   3/4 cup vegetable oil

                   4 tbsp vinegar

Method:

Mix all ingredients together.  Pour into 13X9 greased pan and bake @ 350 (or fill cupcake liners 3/4 full)

 

Icing:

Ingredients:

                    1 lb powdered sugar

                    2/3 cup crisco

                    1/8 tsp salt

                    1/2 tsp vanilla

                     3 tbsp water

method:

beat at medium speed 5-10 minutes until creamy.  add water until fluffy.

    I've made that cake for years (we were vegan) and it is so yummy! You can make it right in the 13x9 pan and save yourself the extra dishes. Just mix all the dry ingredients in the pan, make three wells in the dry mix. Add the vinegar into one, oil in one, and vanilla in one (I always add vanilla to my baked goods.) Whisk it all together and pop in the oven. Great, now I'm hungry for cake.

    ETA: I also sometimes devide it between two round pans to make a layer cake.

    Any thoughts on what I could use instead of Crisco in the icing?  Crisco has soybean oil in it, and M can't have that.  I really want to make this cake!  My birthday is next week, and there's no way I'm not having cake.
