Chicken-something, pierogies, and a veggie. I hate cooking.
If anyone has suggestions for something easy and yummy to do with the chicken that doesn't require a grill (unless I can use our cast iron grill pan--our grill rusted out and we haven't gotten a new one yet), please share!
It is looking like either a grilled veggie sandwich (eggplant, zucchini, red onion, tomato, basil, provalone) with a fruit salad OR a shrimp pasta salad.
lol. I've been reading about how fantastic these ch-ch-ch-chia seeds are for auto immune stuff, blood sugars, weight control, etc. so I'm trying it out. Breakfast is no big deal, just sprinkle them on my "oat"meal like flax, but I'm still too chicken to put them much of anything else. Today I mixed a big blog of gel in some cran juice and slammed it, not that bad. Not really that hungry, so maybe?????
We did binge on crab legs last nite - only $6 a pound for nice size ones right now. I love summer and dipping things in garlic butter. yum.

Tonight we're having quesadillas - my grocery store makes amazing fresh salsa so I find any excuse to include it in our dinner!
Also on the menu for the week Penne w/spinach & ricotta, steak em up pitas (both recipes that I've torn out of Rachael Ray's magazine), and chicken spinach pie w/mashed potato crust (from parenting).

salads are great and fast this time of the year though. We also had hot bacon dressing over spinach, shrimp, and almonds this week.
