I can have gas or electric (hook-ups for both). I'll probably either do stainless or black to match the other appliances. Other than that, I'm very undecided and really don't know where to start. So, if you were buying a new stove, what would be on YOUR wish list? TIA!

We had to buy a new range (and refrigerator) when we bought our house, because there weren't any. So, we decided to splurge a little. I got a stainless Maytag Gemini, with a 5 burner stovetop, and a double oven. I don't think I've ever used all 5 burners at once, but I love love love the double oven. The top one is small, so it's great if we just want to put in a pizza or something else that doesn't take a lot of space. The bottom oven is regular size. I just love it, and can't imagine not having a double oven if we ever buy a different house.
My only complaint is that stainless is kinda hard to keep nice and shiny, especially with a little one around. It shows watermarks and handprints, so I don't wipe it down with a regular dishrag. I got some cleaner at Best Buy that does a really great job, but unfortunately it's probably not the most EF thing out there...
My dream stove (which we'll probably be buying in a couple of years to replace the super crappy one that came with this house) is gas with a fiver burner range and possibly a double oven. That means it has no warming drawer on the bottom, instead it's a full size oven with a smaller size separate oven so you can cook multiple things at the same time.
ETA - and if you have the hookups for both, getting a gas range with an electric oven (and yes, this exists) would also be on my wish list. Electric ovens are way better for baking.
IF money were no object. I'd get stainless, double convection oven, with 5 burners.
We recently got an oven (a couple months ago) and I only scratched 2 off my wish list. It's stainless and convection. And I LOVE the convection on it. It bakes my food so well.
I don't know about electric vs gas. I've never used gas.
My brother has the older model same stove. I want one so bad. His is really nice too because the knobs are on the top of the stove, not the front. We have to keep all of our stove knobs in a drawer to keep little fingers from messing with them. Having them on the top helps.
We must have the same one :-) We got it as a floor model, so got a really good deal on it.
Make sure you can lock the oven whenever you need to/want to. Some only lock when they're in cleaning mode, but you want it to lock right after you're done so no little hands can open a hot oven.
And control lock is nice, too, if your controls are in the front.
My wish list: gas, flat burner grates that span the whole top (so you can put a large pot or double-burner griddle on it without balancing it on the burner), at least one burner that you can adjust to a really low simmer (a little harder with gas than electric), oven lock (though we got an after-market one that works pretty well), self-cleaning, storage drawer, convection oven. The double-oven thing someone else mentioned would be really nice!
That being said, we have an electric range (we have a gas line, but it would be $400+ to run it across the basement and up into the kitchen, and we figured we could just spend that money on a much nicer electric range) that has a smooth top, which is fantastic for our tiny kitchen because we can kind of use it as extra counter space when we're not using the stove. Two of the burners are dual burners (you can use it as a small burner or a large burner) and the oven is convection. I'm very happy with what we have now.
