Grilled Chicken Recipe?

Hi!  Does anyone have a good marinade/rub/recipe they use when grilling chicken?  We are having company over the weekend and they don't eat red meat, so chicken it is.  I am looking for some inspiration.  Thanks!

  • I'm a big fan of lots of fresh garlic, splash of olive oil, salt & pepper, a big squeeze of lemon and some fresh herbs... whatever you like - rosemary, parsley, cilantro, etc.

  • My favorite grilled chicken is BBQ chicken.  All I do is mix half a bottle of BBQ sauce (any kind, any flavor) with half a bottle of italian dressing.  It is tangy and sweet.  So yum!

  • We just tried a Mojito Lime marinade mix last week and both really liked it.  It was pre-packaged and you have to add oil and water.  I think it was by Grill Mates or McCormick?  Sorry, I can't remember exactly what the brand was.

  • Someone (maybe JenRose?) posted one here once that you marinate in Italian dressing, grill, top with avocado, tomato and fresh mozzarella and pop under the broiler. We leave off the avocado here, but we love it.

  • Honey Lime Grilled Chicken - my go to chicken marinade

    Island Chicken - also good

    Not a grilled chicken recipe as written but can probably be modified to be that way - Chicken Bruschetta

  • 2T chili powder 2tsp cinnamon 2tsp cumin 2tsp light brown sugar 2tsp kosher salt (divided) 1/2tsp pepper Heat the grill to high. Wisk spices (with 1tsp salt) together. Season top of chicken (with the spice mixture) then sprinkle bottom side with remaining tsp of salt. Drizzle with olive oil. Grill, rub side down, about 3 min on med-high heat (until lightly golden brown and crust has formed). Flip the chicken breasts then grill (closed lid) for about 6 min. Let chicken rest for 5 min before slicing. So.Freaking.Good!
  • We use about a Tbsp of garlic powder and Worchestershire Sauce.  Comes out juicy and tender and yummy!

  • Mix a can/bottle of beer and a packet of Italian dressing mix.
