Anyone have a recipe they love? I've tried a bunch and I think so far I like the one from Vegan Cupcakes Take Over the World. I am always trying to bake delicious treats for my son especially when we go to birthday parties and he can't have what's being offered....

Go to the library (or better yet, buy) and get The Allergen Free Baker's Handbook by Cybele Pascal.
Everything is free of the top 8 allergens, most are corn free too, and everything is delicious!!

my "Joy of Vegan Baking" cookbook. Lots of delicious recipes that you seriously cannot tell are vegan-ized. I am very lactose intolerant and allergic to soy, and have tested lots of the recipes. Even DH (without any allergies) approves.
Ground flax seed for an egg subsitute works wonders most of the time. The book explains in the details the right ingredients to get and use.
PSA: soy-free Earth Balance margarine spread is my best friend (they make several others that aren't soy-free, look for the red "SOY-FREE" label). I have yet to find a margarine/butter substitute that is dairy AND soy free other than this one. It tastes pretty good and bakes well -- the only exception is it isn't the best in cookies. Cakes & muffins come out splendid.

My MIL made me the vegan chocolate cupcakes from Martha Stewart's Cupcake book and they were yummy. She used marshmallow fluff as the frosting.
1-1/2 c cake flour (not self-rising)
3/4 c sugar
1/4 c unsweetened cocoa powder
1 t baking soda
1/4 c plus 1T veg oil (use non-soy based)
1 T white vinegar
1 t vanilla wxtract
1-1/4 c water
sift dry ingred.
electric mix wet, mix in dry
20-25 min at 350
