GF All Purpose Flours

I have celiac disease and am gluten free as a result. Prior to being diagnosed I was an avid baker. I spent the first year after my diagnosis struggling with gluten free baking, trying out all sorts of flour blends and having mixed results at best. Several months ago I decided to try out Tom Sawyer flour, an all purpose GF flour that contains gelatin. Because of the gelatin you don't need to add an xanthan gum and it subs 1:1 in traditional recipes. It worked wonderfully! I was able to go back to my old tried and true recipes from before my diagnosis. A few weeks ago the GF store I go to started carrying Better Batter flour as well. I had heard good things about that flour and bought a small box to test it out. It was excellent as well. It uses pectin rather than gelatin, but substitutes the same was Tom Sawyer does. I haven't done enough baking with both to say for sure which is better, but I am thrilled with the results of both. I just wanted to let any other GF moms out there know about these flours.

    Now I just have to hope that when I look it up it doesn't contain brown rice flour. I am severely allergic to brown rice. Fingers crossed......

    ETA: Both brands of all purpose flours still contain xanthan gum. They also contain gelatin. I was hopeful for a minute, but I'm sensitive to xanthan gum. Thanks anyway!

  • I too am gluten free due to health reasons! Suspected Celiac not confirmed yet. I love Bob's Red Mill All Purpose flour :)
