Cheese questions

How long do you think freshly shredded cheese would be ok to sit in the fridge (covered)?  It will take a zillion years to shred it all and I  have other things to do tomorrow, so it'd be nice if I could do it tonight.

What about diced tomatoes? (yes, I realize that's not cheese related)

Is it ok for me to mix the monterey and cheddar cheeses together once grated or would you keep them separated for serving?

  • Neither the tomatoes nor the cheese will go bad.  I'd imagine the cheese might stick together a tiny bit, but I don't know how much.  I've kept tomatoes (not always diced) in tupperware for a few days and they've been fine. 

    I'd probably go ahead and mix the two cheeses together as they're not all that different, IMO.  If it was something like pepperjack, I'd keep that apart.

  • they'll definitely be fine overnight. we grate cheese & chop veggies ahead of time all the time. as long as they were fresh to start, you've probably got a week for most things.

    this. and a lot of the time I shred until my arm hurts [esp with parm and other hard chz] that way I can just grab a pinch here and there to add in or top dishes, so the cheese should stay fresh, as long as its stored properly, until it would normally start to mold. But with shredded you can't just cut the mold off, at least thats what we do if its not too bad. Tomato should also be fine for a couple days if its covered.. don't forget to sprinkle with a little salt to draw the moisture out YUMMMMM

    and with that I'm headed to kitchen for chz and crackers lol
