Bakers come in - re: buttercream

I've only made buttercream a couple times.  I'm making chocolate cupcakes for my son's 3rd birthday tomorrow (sniff) and will ice them with buttercream.  Can I make the frosting and ice them today or is it better to make it today and ice tomorrow or do both tomorrow?  If today, do I store them in the pantry in an enclosed container?

  • I think it would be best to do both tomorrow.  If you do frost them today, I would store them in the fridge.

  • Thanks guys.  I think I may try to make them tonight and then just store in the fridge.  Tomorrow is going to be kind of busy for us.

  • Make the buttercream tonight and keep it in the fridge.  Make the cupcakes tonight and keep them in and airtight container on the counter.  Tomorrow, put the buttercream on the counter for several hours to soften and then frost the cupcakes.  You can leave the cupcakes out on the counter at that point because buttercream does not need to be refridgerated.  Just don't leave them outside for an extended period of time.

  • Cupcakes or cakes will dry out if they are not iced and put in the fridge.  I would store them in an air tight container on the counter and ice them tomorrow.
