i have to give mcgee credit for the lentil burrito recipe. she posted it here months ago and we quickly became addicts. they're just so easy and cheap and we add tons of extra veggies to boost the nutritional value.
i dont have a real recipe that i follow anymore, but this is what i do.
1. simmer 1 cup of lentils with 2 cups of water (or broth) for twenty minutes
2. while lentils are simmering, i like to cook whatever other veggies i have on hand with a little olive oil in a big skillet. i always use an onion and a red pepper, but we've also added kale, diced yellow squash and diced zucchini with good results. it just depends on what we have on hand. saute veggies until soft.
3. when lentils are done, drain off any water and add the lentils to the veggie skillet. add canned enchilada sauce until you like the consistency, i usually use just over half a can of medium heat sauce. heat through.
4. make your burritos with whatever ingredients you like. we usually use big tortillas, lettuce, tomato, cheese, avocado and greek yogurt (our usual sub for sour cream). then i add lots of hot sauce, roll it up and enjoy.
let me know what you think. we've recommended them to several people and only my dad didnt like them
