s/o Food... what to make w/ cottage cheese?

Backstory: DS loves Publix cottage cheese with pineapple in it.  It has tons of sugar, though and so I thought I'd make him some w/ regular cottage cheese and just add canned pineapple to it.  Yeah... he didn't fall for it.  Turns out he really loves the sugar.  Great.  Thanks for introducing him to that, Dad...

Anyway, dummy me bought two containers of plain cottage cheese instead of just one to try out my experiment.  So now I have a big container of cottage cheese and I'm not sure what to do with it.

Any ideas?  Tried and true recipes?  Seems like there should be something... because no one is going to eat the plain cottage cheese!

  • Well, I like plain cottage cheese, but I'm weird.

    Anyway one of my favorite recipes is to chop up and add:

    1/2 diced red bell pepper
    1/2 diced green bell pepper
    1 clove of garlic diced
    1 TBSP rice vinegar
    salt, pepper, and a touch of cumin

    Serve on pitas or with crackers.  It's really tasty especially for summer!

  • I may be a weirdo. but my mom always heated up egg noodles or kluski noodles and let the cottage cheese get a good temp (not stone cold but not like room temp...) and mixed it w/ the warm noodles. We put salt and pepper on it and ate it like that. I think it's one of those "depression" cheap food things. LOL

  • I just made this baked ziti and it was the best baked ziti I've ever eaten, honestly. So full of flavor.
  • You could always try adding a little agave nectar to sweeten the mixture...still sugar, just not processed :)

    My mom always made lasagna with cottage cheese because it was cheaper. I never knew lasagna is generally made with ricotta until I worked in an Italian restaurant.Embarrassed

    Like others, I like plain cottage cheese with crackers or some crusty bread.

     

  • I make a marinade with cottage cheese. The measurements below serve two. I put it over steak. It sounds bad but it's really good....Stick out tongue

    4 tablespoons cottage cheese
    1 lemon, halved
    a few sprigs of fresh thyme
    extra virgin olive oil

  • I make a quiche similar to this one that uses cottage cheese. But I never buy the low-fat stuff, so it's not "exactly" that recipe Smile

  • i make a spinach quiche (don't have a recipe) with cottage cheese, 4 eggs, and about 1 lb chopped spinach (thawed from mfrozen) I add 1/2 cup shredded sharp cheddar, some spices, and maybe some onions.

    I also make a mexican lasagne where i layer tortillas with taco sauce, cottage cheese, cheddar, beans (or beef) and top with chiles and cheddar.

    Someone on here used to make cottage cheese pancakes.

    i have also used cottage cheese in place of ricotta

    This is totally what I was going to suggest. Yum Yum Yum.  We heated ours in a big skillet.  Now I need to make some :-)

  • We use cottage cheese in our lasagna mixture

  • So easy and full of protien and gluten free if you use gluten free oats.  You can play around with the spices.  My favorite was pumpkin pie spice.

    .5 cups oats
    .5 cup cottage cheese
    4 egg whites
    1 tsp vanilla
    1 tsp cinnamon
    .5 tsp nutmeg
    Sweetener if desired
    Mix all ingredients together in a blender and mix until smooth. Pour batter into pan or onto griddle. Makes one huge cake. Top with yogurt, jam or anything else that sounds yummy.
