I found out at 9:30 tonight that snack tomorrow at DS' playgroup would not be GF. Yes, I have store-bought GF cookies in the pantry, but all the other kids will be eating homemade brownies. I want him to have something just as delicious and special... and I want to show the other moms that you can bake GF. Soooo... I was "that mom" throwing together a batch of cookies at 10 pm. Ok, it was a mix, but they're still homemade and yummmy! Anyone else done this late night scramble to provide an allergen-free alternative for their kiddo?

Re: Totally "that mom" tonight-- baking GF at 10pm
Oh, yes, many times. I'm sure she will love her treat that you are baking for her!!
On a sidenote, I used to lots of late-night baking parties where I would cook up a ton of pancakes, muffins, breads, pastas, etc., to freeze and pull out for individual meals. Days like this: https://www.themagicofmama.com/2010/04/baking-baking-and-even-more-baking.html
Fun, fun, fun as an allergy mom.

Good work!
I have done it once. My daughter has eggs for breakfast every morning and she is getting so tired of it, so I tried to make her blueberry muffins once. I had to use her Neocate formula for the milk replacement, and applesauce to replace butter, and wheat flour. Tasted like shiit to me, but she loved it!
