You could get a plain or plaid quilt and sheets and accessories from Cars... I know I saw some sheets, Lightning McQueen 3D pillow, etc at Target. You could check Homegoods too, that's where I got Ethan's train bedding. And I've actually seen more sheet sets at TJ Maxx in various non-character kid friendly prints by a brand called Hillcrest.

Do you have to actually do racecar sheets? Have you already gotten him a big kid bed? What about a car bed, instead?
Is it possible he'll forget what he asked for by the time it's ready?
Well, he has specifically requested racecars ON the sheets. He also says that he wants dinosaurs on the walls. Whatevs. Darn kid won't change his mind, either. He doesn't even hesitate when we ask him. It's not like I'm the type to be obsessed with furniture and bedding and decor for the boys' rooms - ALL the bedroom furniture in our house (except the crib and our bed) is second hand (from close friends/family, not just randos), and I'll honor his requests (dinsaurs on the wall and all), since it is HIS room; but I'd like to be able to find bedding that doesn't SCREAM character, if possible.
To answer the other question, we've decided to just go ahead and use the full size bed that we already have and move his room, all together. W will inherit J's old room (along with everything currently in it).
This made me laugh! We let Hudson pick his comforter out and as much as I tried to sway him we still ended up with the Disney Cars one. It's reversible and I am still trying to determine which side is less offensive oh well though, it made him happy!

Try HomeGoods or TJMaxx. They usually have a nice selection of kids sheets that are not "character-y"
ETA: I know what you mean about this theme. We have the Disney Cars bedding on G's toddler bed right now and I can't wait to get rid of it!
