Fried Chicken

I've never made it, but I love it.

If you are a chicken maven, tell me how to rock that motherfuckingchicken to the crispy golden state it deserves to be in.

I know my BIL coats it in hot sauce then the breading so you can do that if you like spicy.

  • I use Paula Deen's recipe.  The secret is soaking it in buttermilk for 24 hours prior to cooking and using a cast iron skillet.
  • DH uses Alton Brown?s recipe (from foodnetwork.com) in a cast iron skillet.

    The modifications -

We have to have it gluten free so we use Bob?s Red Mill GF flour but I swear it?s better than wheat flour on fried chicken.

He puts 3 tbsp Kosher Salt & 1 tbsp paprika in the buttermilk that you soak it in overnight.

I season mine with Lawry's, fresh cracked black pepper, and garlic salt. Dredge in flour, fry in a pan with vegetable oil. The key is to not cook it too high of a temp or too fast. Also add pats of butter to the oil while frying.

My chicken is pretty kickass .

  • How long do you cook it? I'm shamed to admit I've never fried anything in my life.

and @HappyDaze, you know I like it spicy.

This!  My mom always used her cast iron skillet for frying.  She only fryed about once a month but it was the best!  Let me know when you are making that and I'll be right over with some mashed potatoes or maybe a pie Big Smile

Holy crap, that sounds delicious, Stylez! I may have to try this. If you have any more tips, let me know woman!

I usually do the three bowl dip. First one is flour, next is egg and the third = bread crumbs with mint flakes. I brown them in a frying pan with olive oil then I bake them at 400F for 20-30 minutes in a glass baking pan. NOMZ

That's too bad about the discount.  I am sure any skillet will do.

  • I also soak in buttermilk (just a few hours) and do a three bowl dredge:

egg, flour and seasoned breadcrumbs with panko. I season the breadcrumbs with season salt, lemon pepper, cayenne, garlic and onion powder. Lots and lots of pepper.

I fry in peanut oil too.
