birthday cake

Thankfully, the LO and I are only dairy free, but I'm looking for a good 1st birthday cake recipe for her. I have a good dairy free chocolate cake recipe, but I'm hesitant to give her a lot of chocolate cake.

What is better for LO - chocolate or white cake?  does it matter? If white is better, anyone have a good recipe? I would also try a good dairy free carrot cake recipe.

    I don't have a recipe right here, but we use Earth Balance (vegan) stick margarine and substitute that for any cake.  I made my son spice cake for his first birthday (with bananas instead of eggs and applesauce instead of butter).  My kids don't like chocolate, but some do.

    My son has an egg allergy, for his first birthday cake I used a white cake mix and just substituted applesause for eggs (1/4 cup per egg). I also use many of his baby food puree, bananas, sweet potatoes carrots etc. regularly used in his breakfast foods of waffle, muffins, pancakes etc. I have also tried a can of diet sprite as an egg substitute, and it comes out ok...a bit too moist and crumbly in my book, but my son liked it- just Google it if you are interested. Our supermarket also has a special food allergy section, but I found it after his birthday, i haven't done so yet, but i do plan on trying a mix or two out.... warning they're 2-3x the normal cost of mixes.
