GD & Bedrest

Hey ladies!

Thought I would ask you guys for some advice.  I'm not on strict bedrest which means I can't cook meals for myself anymore.  What kind of things do you eat that your husband can easily make or you can just grab from the kitchen?  I just got put on bedrest and I already hate having to ask DH for everything I need.  If you have any suggestions they would be appreciated!!  TIA!

  • Mind you I'm not saying this is the healthiest thing going and I wouldn't eat it all of the time, but a BLT is super easy.  Egg salad sandwiches are also pretty easy.  I have a mini-fridge in my bedroom (I usually have to drink milk in the middle of the night to avoid ketones and there is no way I'm going downstairs at 3 AM to get it).  In there I keep Laughing Cow wedges for snacks, cheese sticks, yogurts, cottage cheese, plus crackers on the top.   If you're on bedrest, I'd think a fridge like mine would rock your world.  Don't laugh but I also have a mini-microwave up here too (used it with DS but I also work from home in an annex to my bedroom).  Total setup was maybe $100 and I used it all with my son when he was born.  I never thought about running downstairs to get bottles in the middle of the night and how much that would stink.  So the fridge came in handy. 

    Ok back to easy meals.  Any type of casserole like mac 'n cheese or even lasagna.  I know I can eat that without my numbers going too crazy as long as I watch the portions.   Chicken tenders made into fajitas with green and red peppers are also good (just don't eat too many tortillas - I do a taco salad instead).

  • Salads are easy, though I can't eat them all the time. Honestly, I love getting the rotisserie chickens from the supermarket... they last us a few days, and you can use the leftovers in sandwiches, salads, etc. Scrambled eggs are good for breakfasts, though they get a little old. Greek yogurt has been good for me, too... It has extra protein to help with the carbs and make you feel more full.

  • My husband grills a lot of chicken, pork, etc.  Or, puts it on the George Foreman.  Plus, the microwave vegetables from Green Giant are super easy to make.

    I also really like JosieH's idea about the small fridge and microwave.  It would really help with snacks like cottage cheese, yogurts, etc.  Plus, keeping things like pretzels and peanut butter on hand or fruit easily available should help.

  • Thanks so much!  My mom is visiting today and she said she would go to the grocery store for me so I'm going to make a list based on your suggestions :)  I really love carbs so this hasn't been the easiest thing to swallow :-/
