Hi! i just wanted to share this cook book with everyone. It's mainly geared towards kids with EOS (they are allergic to almost every food). It helped us a lot when we just found out about his allergies and i wasn't much of a cook. We also feared that he was allergic to everything b/c he would break out daily and we couldn't test him for another 6 months so this book saved us with feeding my child.
It's very simple and the recipes aren't super tricky. It's amazing what you can do with a simple 3 or 4 ingredients.

your son has the same allergies as mine. I did love the book.. it helped in the beginning stages and i still use some recipes. I agree.. I have so many cook books and it's hard to alter them. One suggestion is buying a vegan cookbook and substituting soy milk with rice/oats milk (oatsmilk is thicker so it bakes better) and soy butter/margarine with this butter. And then adding grilled chicken or what ever meat you want to each recipe.
My son isn't too daring when it comes to new things either. Sometimes his entire dinner is thrown away b/c he won't try it. He usually eats the same exact thing every single day. But as long as it's healthy we don't worry too much.
What does your Son's diet look like? always curious what others eat with the same allergies.

BF: earths best oatmeal with rice milk and with a teaspoon of flaxseed meal
Snack: cheerios
LN: almond butter on chex (here is what it looks like) *not sure if this is the right link since i can't see images at work b/c they block them.. so hopefully it's a photo of a little chex sandwich. I now started adding jelly to the sandwich*
sometimes i put almond butter w/ jelly in a small cup and a spoon and some bread once a month (i make home made pizza dough and freeze it). if you want the recipe, let me know -it's super easy.
Snack: fruit
Dinner: mac & chreese with some extra dayia "cheese" and pureed veggie mix. Guacamole on a sweet potato chip (don't know the brand, but there is only one that he can have). Sometimes i add veggies to the guacamole mix.
He won't have guacamole with a spoon. must be on a chip. He won't have it in a regular dish -must be in a guacamole dish. He won't have avocados plain -must be with lime juice, onions, tomatoes and salt. He's so weird.
2 days ago i gave him whole steamed cauliflower with his butter and some dayia cheese on it and though he would never try it. he licked the plate clean. I gave it to him last night again and he though it was poison.. Last month i made broccoli for my DH and i as a side and he ate both of our portions and hasn't touched broccoli since.
Also, from about 14 months to 16 months he wanted nothing to do with food other than his oatmeal. he had oatmeal for breakfast, lunch and dinner.
