Tofu?

Hey Ladies! I've been wondering about tofu for a while and yesterday my Mom gave DD some and she liked it! So, what's the scoop with tofu? Where in the store do you actually buy it? Lol! Are there different kinds? Anything I have to do to prepare it? Anything I need to watch out for when giving it to DD? Like, not too much or whatever? (Thinking about how you don't want to give too much bananas for constipation.) Thanks for your help! I am clueless! (And my Mom doesn't know much either.)

It's often in the produce dept. and there are a bunch of different types. Very basically there are different firmnesses: silken (good for smoothies and cream pies), soft, firm, and extra firm. I usually only get the silken for smoothies or soups or I get the extra firm.

I most prefer extra firm! I like it diced up in a salad (shredded cabbage you can get in the bag, diced tofu, soy/ginger dressing!), lightly fried and drizzled with sauce like BBQ, soy, asian stir-fry, etc. When you get ready to use your extra firm tofu you want to put it between some paper towels and squeeze out some of the water. If you don't use it all store it by putting it into a tupperware and covering it with clean, cold water. If you don't use it in the next day change out the water to prolong shelf life.

There are also other soy products but I haven't used most of them so I'll let someone else speak to that.

I recommend going to Barnes & Noble or Amazon and getting a good tofu cookbook. I really, really do :-)

I buy it in the produce section and buy extra firm. DS LOVES it! The great thing about tofu is that it's totally flavorless so it will soak up the flavor of whatever you cook it in.
