quick, easy shrimp recipes?

I have a pound and a half of cooked. frozen shrimp- but Im uninspired with the recipes I have on hand- anyone have a go-to one?

    I like to saut? mixed veggies, such as, onions, carrots, mushroom, bell peppers, tomato, zucchini etc. with a little evoo and garlic. While thats cooking I boil up some shaped noodles personally I like penne with this dish. Once those are about done cooking throw the shrimp into a pan with some evoo and pressed garlic, and cook it up. When everything is all done cooking toss them all together in a bowl and mix. I like to add either some parmesan or feta cheese and sprinkle on dried basil or cut up some fresh basil if I have any on hand. If I'm feeling sassy and I dont usually do this with the shrimp, I like to take some chopped up walnuts, pecans or macadamia nuts and toss those in the mix.

    It's definitely different for us, but we both really enjoyed it.  Mirin is also not easy to find, but I googled and found that many people substitute rice vinegar for it, which I had on hand.

    Check in the asian food grocery stores or if your on the west coast the asian food grocery section.

    Honestly, I didn't feel like making the extra effort to find it.  In my google search there were a lot of recommendations for the rice vinegar over the mirin anyway.  If I thought I would use it in other things then maybe I would go to an asian grocer

  • I like to make some angel hair pasta, then saute some garlic in EVOO and add shrimp, remove shrimp and put one can Italian style tomatoes (drained), some white wine (like 1/2c), parsley, basil and a packet of Alfredo powdered sauce.  Add shrimp back in and sprinkle with parm cheese!  YUM!!!  And eat some noodles for me bc I'm low/no carb for a week to try to get this dang baby weight off!!!!
