Duran Duran (5 times), fo sho. Sting, probably counts. Aerosmith, maybe. Fleetwood Mac. I've seen a lot of concerts, I'm forgetting all of them right now.
I don't remember exact years. But, I think The Eagles, Willie Nelson and Sting are all pretty legendary. I went to the Eagles concert with my Dad and it was a potfest. I kept making fun of my Dad, because had he not been attending a concert with his daughter, he probably would have been taking part. Then, DH and I had to see Willie before he died, checked that off.
Not legendary, but some of my favorite shows have been Ben Folds (and Ben Folds Five on seperate occasions) and Cowboy Mouth.
I've been to a bunch of concerts, so I don't know who exactly would fall in to the "legend" category. But, here are a few:
Sting
B.B. King
Eric Clapton
James Taylor (like, a couple of weeks ago, ha ha!)
Les Paul
Oddly enough, I can't think of any lady legends I've seen in concert. I did see Bonnie Raitt sit-in with the Resentments one night at the Saxon Pub, but I don't think that would qualify.
Excluding festivals - George Strait, Elton John, Stevie Wonder, Paul Simon, Simon & Garfunkel, Willie, Smokey Robinson, Chubby Checker (I guess he's a legend, right?), Reba, I think that's it. Well Orchestra Baobab, but they are legends in Senegal, doesn't count for much here.
Stevie was BY FAR the best, probably the best concert I've ever been to. Chubby Checker was the worst. I still have nightmares about "the hucklebuck". shudder
Also not sure who is considered legendary but these are some that I would consider legends: Clapton, Elton John, billy Joel, Elton John/Billy Joel together, bb king, U2, eagles (x2), don Henley solo, tom petty, George strait (x3), Willie Nelson, Robert Earl Keen (x3)
Re: s/o Legend concerts
Bob Dylan, 2006

I'm blanking, I've seen a ton of great stuff, but I don't really know what the pre-recs for legend status is so I'll leave it at these.

My 3 year old requests him every morning! (Casas de Madera)
Nina Simone- 2000 (her last American tour). I cried like a baby the whole show.
ETA: Now they're all coming back to me-
McCoy Tyner, Sonny Rollins, lots of other jazz legends, Goran Bragovich (a legend in the Balkans!), The Rolling Stones, The Allman Brothers...
