I personally love to make them with French Vanilla cupcake mix and Vanilla frosting. I melt Milk Chocolate chips with a little bit of veg/canola oil. I like the taste of them together.
red velvet with cream cheese icing is good. I also like chocolate with vanilla icing (like an oreo) or just plain old vanilla vanilla. I've never tried this, but I bet chocolate cake with peanut butter frosting would be awesome too.
Just a note, if you use yellow or white cake mix, make sure you cut off the edges of the cake after it cooks. otherwise it won't look completely white or yellow, because it'll have pieces of brown mixed in. I learned that the hard way, lol

Hands down, lemon cake, lemon frosting, and white chocolate. Once I dipped them and gave them a coat of green sprinkles with tiny candy flowers and they looked like little green grassy planets.

I have only done them once and went boring, yellow cake, vanilla icing, pink & yellow chocolate coatings (so basically white choco flavored but do those candy things come in any flavors besides white & milk & dark choco?). But ditto dcunningham, we had to cut off the edges b/c of the brown.
I did chocolate cake, chocolate fudge icing and then mixed crushed candy cane in and dipped them in dark chocolate. Then I used a candy cane stick as the pop stick. YUM!
I also thought German Chocolate cake pops would be yummy using the coconut frosting.
