You'll probably get lots of recs for salads with Italian dressing, but I also like to make one with pesto sauce and crumbled gorgonzola. Sometimes I add a little extra olive oil if the pesto sauce needs thinning out, and usually some extra garlic powder/salt.
I make this cold orzo pasta often...really easy and good. I get all the stuff at TJ's. It can apply to any pasta really. You could throw in olives too, that would be yummy.
Trick: when in doubt of what to add OR in need of fresh veggies, throw in a jar of Giardiniera (found anywhere) and you are set!
