homemade fajitas (beef and chicken with onion and green pepper) with all the fixins...homemade guacamole, cheddar cheese, etc. Also some fat free refried beans. One of my favorite meals.
Oh and I made some whole wheat chocolate banana bread for dessert.
This will be the first time I've had pasta in a few weeks. I've got to figure out how much I can eat of it, since I have GD. I don't want my numbers to spike. I'm assuming I'll be eating a salad as well.
Trying out a new Martha Stewart recipie - Chicken Koftas with cucumber yogurt sauce. They look like chicken gyros with ground chicken patties instead of the gyro meat. Probably will make couscous on the side.

I'm making breakfast for dinner, we do it weekly to use up eggs from our hens.
Eggs, turkey sausages & homemade apple cinnamon pancakes.
ETA: for dessert we have Popsicles or maybe brownies if DH didn't eat them all when I was at work today.
