I pack things in "outfits" so pants and shirts rolled or folded together.
I put one kid's stuff on one side and the other on the other with either my clothes or make up, etc in the middle to divide them.
No bags!
Our IF journey: 1 m/c, 1 IVF with only 3 eggs retrieved yielding Dylan and a lost twin, 1 shocker unmedicated BFP resulting in Jace, 3 more unmedicated pregnancies ending in more losses.

I've done both and definitely packing by outfit is easier. I haven't done the ziploc bag but that would make it a lot easier for DH because I could pack the socks easily with it. I do keep sweatshirts, jackets, etc. separate though, along with PJs. I try to plan with the first things I'll need at the top (typically PJs).
As others have said, I just pack outfits (including socks) together, DD1's in a stack on one side, with the next day's outfit on top, and same for DD2 on the other side. I put their pjs right on top, easy to grab, and extra pjs in a stack with extra sweatshirts, jackets and/or bathing suits and cover-ups. I put undies in a side pocket so they're easy to find before bathtime/bedtime.

If it's a driving vacation, I pile everything in a duffel and I'm done. We are flying to Georgia to visit my family in July, and are only taking carry-ons. So, I'm going to roll up shirts together, shorts together, socks, shoes, underwear, etc. I think rolling it up wont take up as much space as piling would, cause I'm sure grandma/grandpa will be buying them stuff.
In my personal carry-on, I will have ziplock bags to with a change of clothes for each, incase one of them has an accident. I'm getting a headache just thinking of everything I have to remember to bring. : )
