Anyone have a dairy free cake recipe/subbing goat's milk?

that they love?  I can pull one off line, but this will be consumed by dairy lovers and me, so I feel like I should at least do some legitimate research for their benefit. Or has anyone tried to use goat's milk in recipes instead of cows?  Does it work well?  It'd be an entire cup, so I'd imagine it would affect the taste a bit...

  • I always subbed rice milk or coconut milk in baking for DS and I found it worked out well.  I find that goat's milk has a distinct strong flavour, so I'm not sure about subbing with it.

    That said, I can't seem to find my recipes, so really, I haven't helped you at all.

  • Eli has a milk allergy and I always just sub his soy milk in my regular icing and cake recipe. In fact I sub with soy milk for just about everything.

  • seconding the PPs. i've never done goat's milk, but soy milk subs into recipes really well.

    Mmm... I'll take it, but you don't have to - I'm actually looking for white cake at the moment.  However, I would happily keep it on hand for my next cake emergency!
