Caleb & I are in a rut with lunches lately. He won't eat any sandwiches, so its usually mac & cheese or leftover pasta. A lot of days he has cheese, crackers & fruit. Blah.
Jack's top choice for lunch is PB&J. He's obssessed with it which is funny cuz at first when i offered PB to him at 2 he wanted nothing to do with it. I know that suggestion doesn't help u much. we will do leftovers or chicken nuggets or grilled cheese. Or sometimes he will have cheese, crackers and pepperoni (that was a big obsession for him for awhile that i tried to get him away from cuz i didnt want him having that much sodium too many days in one week).
We have trouble coming up with food too. We have been doing plain cheese ravioli with no sauce (he isn't a fan of red sauce), cottage cheese, peanut butter on a spoon (the only way he likes it) and fruits most recently.
For dinners and weekend lunches, we do: quesadillas, PB&J on a sandwich round (she likes the Whitewheat brand ones the best--she doesn't really care for regular bread), chicken nuggets, fish sticks, turkey meat balls with or without marinara sauce, pasta & sauce, mac & cheese, cheese pizza (made on a sandwich round)..
At school she has stuff like baked/BBQ chicken, ham, turkey, bean burritos, hamburgers, lasagna, fish nuggets, etc.. I can email you the menu if you'd like, for ideas.
Chicken nuggets (Tyson Anytizers are his fav), hot dog, broccoli mac&cheese cups, PB on Ritz, Grilled Cheese. He always gets fruit too.
Sometimes I'll just put a bunch of random stuff on a plate and he loves it. For example, today he had crackers, mini-turkey pepperonis, cheese slices, peanuts, craisins, grapes, & a few frosted mini-wheats.

Lunch is hit or miss for us, most days a miss. Jocelyn likes to eat a BIG breakfast, and then have a snack mid morning, which usually means lunch is more snack like. Breakfast she has bacon, waffles, french toast, yogurt, pecans, etc., so she stuffs herself.
We do some sandwiches (PBJ), cheese and crackers, fruit, string cheese, those fruit/veggies applesauce squeeze things, granola bars, etc. Today I took her for frozen yogurt as a treat so she didn't eat anything before nap because that filled her up. Not great, but it is better than nothing.
She usually naps quite a while so when she wakes up it is late and she will have an early dinner and then a bedtime snack.

Yogurt, Jimmy Dean turkey sausage patties (one is enough for her), fruit, toast, scrambled eggs (if I didn't have time to cook eggs for her at b-fast, I'll do it for lunch sometimes just b/c she LOVES eggs), applesauce, turkey bacon, chicken nuggets (fried and grilled), whole grain chef boyardee pasta, and that's all I can think of right now. Hope I suggested something that might work.

We pretty much exclusively do sandwiches for lunch, although Maddie usually deconstructs them and eats all the parts separately. We do ham/cheese, grilled cheese, pb&h, pizza sandwich or peanut butter and banana. Maddie really likes the fish nuggets from TJ's, as well as their mini ravoilis and pastas- those are pretty easy to make and she loves them!

-Trader Joe's sliced turkey breast (think thanksgiving type turkey, not deli)- it shreds really easy
-Trader Joe's turkey meatloaf muffins (ground turkey, spinach and topped with mashed potatoes)- DS loves it, its pre-cooked, I just heat up and mix into a bowl. They are frozen in individual portions
- Ham/turkey cubed, cheese stick cut up
-Pasta- I use rotini, top with Earths' Best carrot/tomato baby food for sauce, and mix in peas and carrots.
- Dr Pragers california veggie burgers cut up- Scrambled eggs
-Rotisserie chicken by itself, or use in quesadillas, or mixed with some bbq sauce
-Meatballs (cut up) with a little bbq sauce

pasta w/broccoli cut up in it and either marinara or just parm cheese
black bean soup
vegetable soup
cheese quesadillas w/salsa
