I hear to not give egg whites to babies under 1 because it's considered an allergen. Then why is it in baby food recipes I've seen including some store bought foods? Some sites say it's fine, others say wait. I'm not sure what to follow.

Unless you have a family history of allergies, I wouldn't be too worried about the one year mark with a lot of stuff. Max had eggs before a year. Other countries that routinely give peanut products to young babies actually have lower rates of peanut allergies. I especially wouldn't worry about it in recipes.
Here is a good article about eggs ... I started letting have Hudson have eggs around that age (before one -- both scrambled and cooked into other things .. )
My ped said they don't care about the allergens before 1 anymore. So I gave Cooper eggs.

Wholesome Baby Food's info says if you breastfed exclusively for 4 months, and have no history of allergies, then go for it. I'm still timid on a some things, but feel much more confident. Now if I could just get K to actually like eggs...

FYI...a great quick way to make eggs for finger foods...
crack an egg in a microwave safe mug

add a splash of milk
add a pinch of cheese
stir with fork
nuke for :60 exactly
= perfect little omelet to cut into pieces for tiny fingers
