I always slice it up thin and do a quick saute w/olive oil, S&P and balsamic vinegar or soy sauce. Then I throw it in a pasta salad with noodles, bell pepper, carrots, parmesan cheese and whatever else I find (using either Italian dressing or some other dressing as a sauce). My husband loves it.

You can chop it up, kind of shred it a bit...Cook some elbow noodles, dice some onions, chop some peppers, mix with a can of crushed tomatoes with puree and a can of whole tomatoes. Add salt, pepper, garlic, season all, whorchestershire sauce to taste. Mix all ingredients in a large pot.
We call it american chop suey. Very yummy. serve with buttered bread and grated parm cheese.
