So, I found out last night that my next door neighbor died. He left behind a wife, a daughter who's 18 or 19, and twin girls who are around 13. He was only 47 and I am assuming since I saw him working in the yard last week it was fairly unexpected. I can relate somewhat easliy considering my first husband died suddenly less than 3 years ago. Anyway....I want to make a casserole and a dessert to take over there and was wondering which flavor casserole is more widely appealing.

Here's the King Ranch one. It doesn't have Ranch dressing or anything like that. That's just part of the name. This sounds just like my recipe except I cut the tortillias into Dorito size pieces to layer instead of bite size. It's a little easier and just as tasty.

This is the closest one I can find to the chicken and stuffing one. I leave out the margarine and layer the ingredients differently. In my recipe, you mix the 2 "cream of" soups and the cooked chicken and spread that in the bottom of the dish, then sprinkly stuffing mix on ( I use Stove Top Cornbread stuffing) and drizzle the chicken broth over the stuffing. It's delicious!
