I got one set with the bedding I ordered. Then I registered for two more that will match my set. I figure three is good. I won't open the third set until I need it so I can return it if I decide it's not necessary. I say better to have too many than not enough.
I have one that came with the bedding set and my mom bought the 2 that coordinate with it from my registry. I also have 2 plain white sheets just in case! I got them on a really good sale at Target

I asked several moms about this...I heard 10 would be the safe side. Is that extreme?! I am sure if there is a blow out I'd wash those immediately (once I woke up for good, of course).
Really great tip someone gave me - when you make up the crib put on the mattress pad, then a crib sheet, then another mattress pad, then another crib sheet. Then in the middle of the night when you have a blowout or or spit up everywhere you just strip one set and there's another underneath. I did this both with the PNP and crib.

I think we probably have about 8 but I use the same 4 over and over again. 2 are on while 2 are in the wash. The rest are just in the linen closet waiting to be donated.
I haven't bought any yet for DD2 since she'll be sleeping in the PNP bassinet for the first few months, however, we have 3 fitted sheets for DD1's crib and that has worked out well for us.
We have four right now, and I was thinking about picking up two more, but from the sounds of everyone else I think we are in good shape. I might just save my money for something else.

Unless you only do laundry like once a month, then, yes, that sounds extreme.
Take a walk through BRU every once in a while. While we were registering, I saw crib sheets that were on clearance for $5 and picked up a couple. Never hurts! lol
With 1 DS, I have 4 sheets and have only used 3. Everyone always told me about leaking and blowouts, and to be perfectly honest we have had that problem maybe 5 or 6 times since he has been born. Unless you have crappy or too big/too small diapers, you shouldn't have too many leaks or blowouts.
We have the sheet that came with the bedding, plus 2 extras. Then I added 1 more to our registry because it matched our theme (elephants) was was super cute So we'll have 4.

I think 3, 4 max is enough. Unless you're really lax about doing laundry. lol

Edit: Since you're having twins I'd probably get 4 or 5.
I had 2 crib sheets, 2 bassinet sheets and 2 pack and play sheets. ALL cotton.
We do laundry a load of laundry a day, everything is All Free & Clear so everyone's is mixed together.
