I smile at loud proclamations of "one and done!" because so often they come when Baby is in the infant stage. Lo and behold, a few months later, and those same people are already hinting at when they think DC#2 should enter the picture (even if it's two or three years down the road). I'm not mocking those feelings - believe me, I had them when DD was at her worst - though deep down I knew we'd have at least one more because I wanted her to have a sibling (but I dreaded the thought). But once babies get over their fussiness, are interacting more and developing a personality, it's funny how people's (especially dad's) tunes change...
Glad your little guy has shown so much improvement that your DH is even entertaining the thought

i was the one who was one and done in this house and for weeks i've been talking about #2. dh isn't convinced yet he can handle another.

I didn't think we'd ever have another one until DD was 7mo old (my 1st mother's day)
