Over the weekend we started being very disciplined about naps (and swaddling for them), I stopped obvious dairy (I had done it before and hadn't seen any difference, but decided to try it again) and started probiotics. And he had his three month birthday on Tuesday.
J is definitely "better" over the past 5 days but now I don't know why. Sigh. We will definitely keep up the probiotics and napping, but I do want to figure out if the dairy made a difference. If so, I have about 200 oz of frozen milk that will be useless.

Yeah, it could definitely still be dairy. Symptoms can ease up quickly or take up to two weeks (since that's how long dairy can stay in your system and his).
If you're concerned about dairy, a simple thing you can do is ask pedi to check his stool for blood. That's a big symptom that is not always obvious to the eye but easy to test for.
ETA - just because there's no blood doesn't mean dairy can't still be a culprit, but if there is you know something is wrong for sure.
