Kid approved dinner!

We struggle with dinner time arond here! Ryan is so picky and really only eats pasta. His meat will stay untouched. We've tried it all!I am now 2 for 2 in making an old Rachel Ray recipe for Dijon Chicken. Both kids have gobbled it up both times I've made it now! Last night, Audrey was hesitant, but she ate some of the sauce and said, "wow, this is delicious mommy". Ryan asked for more chicken..he had thirds!

thought I would share since I know some of you guys have picky eaters too. This is super easy and you don't have to babysit it on the stove either, so that is GREAT!

2 - 14 oz cans of chicken broth

Chicken breast

2TBSP butter

2 TBSP flour

1 TBSP Dijon mustard (I used 2 last night and we liked it better than using only 1)

2 tsp of an herb...I used thyme. Tarragon is the original, but I was out

Pepper

Bring chicken broth to boil add chicken, cover and reduce heat to simmer. Poach chicken 12 minutes.

Remove chicken to a plate and pour broth into a measuring bowl.

Return pan to heat and add butter.

when butter melts, add flour and cook, whisking with butter. (it thickens up FAST)

While whisking, slowly pour liquid back into pan until appropriately thickened, whisking the whole time.

Stir in Dijon and herb and season with salt and pepper.

Return chicken to pan and coat with sauce. Simmer 2 more minutes.

We served with rice pilaf and a veggie.

I put the sauce into a gravy boat and pour over chicken at the table. Yumm, yumm!
