My crib mattress has a vinyl like covering (although I believe it is made from soybeans) - it seems to me like spills/leaks will wipe right off. So I don't need sheet savers, right? If I do, why? I'm either overthinking this or missing something.

I think most mattresses have wipe-able surfaces like this one......I know mine does. I don't understand the point of mattress pads/protectors for these, either.
I got a couple of Ultimate Crib Sheets to try because they actually go on top of the sheet, not underneath. We'll see how it works out, since I've read mixed reviews. There are other products that go on top of the sheet as well, which are for the purpose of protecting the sheets themselves from blowouts and other ick....not so much mattress related.
I think you still need a mattress pad/cover. Putting a sheet directly over mattress feels icky to me and with the baby mattresses the sheet slides and feels cold.
Sheet savers go over the crib sheet.
