I made the cilantro rice...

OMG, yum!  I will never have to go to Chipotle again!

Here is a question or two though....

--can I freeze the rice?  DS and I are the only ones who eat it?  If so what do I do to it?

--can I freeze canned beans too?  Again DS & I are the only ones to eat them and there is a lot left over for next time.  What do I do with them?

    Right? I just posed on facebook last night that I will never need to go to Chipotle again. Oh... coupled with the beans (did you make the skinny taste beans?) and the garlic lime chicken... nom nom nom!!!

    We had it tonight too - with the Garlic Lime Pork Chops.  We loved it!  No idea on the freezing though, sorry!

    I've never tried to freeze rice. You could halve the recipe next time if the recipe is too much.

    The key to freezing rice is to do so when it isn't all cold and dried out so I usually put warmish rice into a ziploc bag, squeeze out the air and seal.  Then I let it cool and freeze it.
