We are having people over tomorrow night for my birthday and are having a taco bar!!
We are doing ground beef and shredded chicken tacos with all the toppings!!
How would you make the chicken? I am planning on keeping the meat in crockpots, but would love to cook the chicken in a crocp pot as well, Suggestions?
My friends are doing some apps, and my one friend is doing a mexi corn bread casserole thing....
Suggest all your fave toppings? Any ideas for sides?
Also how much meat do you think is needed pp, I think we are expecting about 20 people!!

I'd cook the chicken in the crock pot with a jar of your favorite salsa. Shred and put back in to soak up all the juices. YUM.
DH and I use about 1/2 to 3/4 of a pound for the 2 of us and there is still some left over.
Toppings: lettuce, tomato, salsa, cheese, black olives, gauc.....mmmmm now I want chips and salsa.
Do slow cooker salsa chicken. Just put the chicken breasts (can still be frozen) in the slow cooker with some salsa, taco seasoning, water, cream of chicken soup (if you want) and cook until almost done and in the last 30 minutes put in some sour cream. Then shred.
Easy and good.
Toppings for tacos: tomatoes, olives, lettuce, salsa, guac, onions, peppers (so more fajita type), cheese...
Sides..chips and salsa, chips and guac, chips and queso
TI, IUIs, IVF = c/ps and BFNs
I like taco sauce and sour cream as well.

It's been a long journey. TTC since 9/06. multiple IUI's and IVF's and 4 m/c's. IVF#3 = BFP, twins, induced at 34w6d due to baby b passing away (no explanation). Delivered on 35w1d, Baby A - baby girl, and Baby B - baby boy, our little angel.

I would say definitely have some sort of Beans like Black or Pinto in case someone doesn't eat meat. Add a little cumin, onion, garlic, salt and pepper to them, delicious. And for sure avocado too!
Yummy! We also did a taco/fajita bar- I think we did 4lbs meat total? You can always make the chicken taco or fajita style on the stove top and then keep it warm in the crock pot.
Or you can add chicken and a can of salsa and cook it in the crockpot. I've marinated chicken in tequila and then cooked it on the stove with a jar of salsa- that is good too.
Toppings- we had lettuce, tomatoes, cheese, black olives, sour cream, hot sauce, jalapenos..
also had chips and salsa, guac, and melted velveeta with rotel tomatoes -
And someone brought mexican cornbread and a mexican lasagna (like enchilada meat/sauce layered with taco shells and cheese)
Sometimes we have the 7 layer dip too.
ETA: I usually also buy the goya brand of boxed mexican rice - 2 boxes for about 15-20 people
