I am making beignets for my church group tonight (we are have a Cajun theme dinner). I was born in New Orleans (Gretna, La) and lived in the area for the first couple of years of my life. So beignets were always a fun thing to make in my family.
I have a box of the Cafe du Monde mix that I got from a speciality grocery store here. Do I use Vegetable oil or Canola oil to cook the beignets? As well, I do not have an electric skillet. Am I okay to just use a deeper pan to fry up the beignets?

Perigestational hemorrhage and red bleeding 12/17/09. 2nd Ultrasound-8 weeks, still a heartbeat 12/17/09. Baby measured 9 weeks, still a heartbeat 12/23/09. Good NT Scan on 1/8/10, heartbeat 164. EDD 7/28/10. TEAM BLUE! Aidan Thomas born on May 26, 2010.

I'm pretty sure either oil would be fine. I usually only buy canola and we fry everything with that. A deeper frying pan would be fine -- I don't own an electric skillet either!
P.S. I'm a westbanker too!
Growing up, my mom always used Crisco (yeah, ew, but I'm sure any frying oil would work) and a heavy pot.
Now, I see it's too late. Oops!
