I'd like to make some split pea soup, but my mom's recipe uses heavy whipping cream. What would be a good "lighter" substitution yet still give me the creaminess of heavy cream?
The original recipe, which serves 10, is for 2 cups of heavy cream. I was going to halve the recipe since I'm not cooking for a family of seven like my mom did! I never would have thought to use cottage cheese!
I've only done the pureed cottage cheese thing once and it was okay but DH could still tell it was in there (he HATES it). Another good substitute is unflavored yogurt. The only time you *really* need to using whipping cream is when you're going to be...whipping it...like for whipped cream or butter.

This is my substitute (for 2 cups of cream)
16oz of low-fat (or fat-free) cottage cheese with 6 tablespoons of non-fat powdered milk-mix in a blender until it is of a cream consistency
