360 South is kind of a beast (mainly because of St. Stephens right past the bridge) -- I get on at 2222 and it takes me 10 minutes to exit Bee Caves. For the entire stretch of 360 I'd allow about 20-25min.

eh, I'd count on an hour, but it will probably take you less. I used to commute from leander to william cannon/mopac and it would take about an hour in the mornings. sometimes I'd take 360 if I didn't feel like taking mopac, it's a bit more of a PITA due to the lights/school(s), but you shouldn't have any issues with the school traffic at that time. unless they start after 8am?

I travel from CP to St. Eds (WAY past where you are going) 2 days a week. Travel on 360 and travel on Mopac is about equal. If you can wait to leave at 9:00, traffic is almost non-existent. I found that leaving at 8:15 and leaving at 9:00 puts me there about the same time. Seriously. I can leave at 9:00 and get there at 9:45, or leave at 8:15 and get there about 9:40.
Coming back, you should be fine. My last class ends at 1:50. I let them out (cough, cough) 10 minutes early every day and I'm able to be back in Cedar Park at 2:30.

Traffic moves on 360 at least so you won't be stuck not moving like on MoPac.

We go that way (Bee Caves) to the doctor often. You know where I live and I give myself an hour if I need to be there for 9. Sometimes I am 5-10 minutes early, sometimes I'm not. From your house I'd think an hour would be more than enough time.
I make a trip to there every Tues. From my house it used to take me about 20 minutes and I would get to the office right at 9am. Lately though 360 has been horrible. I left RR at 8:40 this Tues and got to the office about 9:10am.
* ETA- I go Mopac to 360. The worst part is definitely 360. Mopac around 8:30 is pretty clear. I hit 360 (at 183) (is that the way you would go, 183 to 360?) just before 9am and it took me about 20 minutes to go the rest of the way when the whole trip usually take me 20 minutes.
