Healthier Birthday Ice Cream Cake?

Hi there.  I live in Vancouver, WA, and am looking for any suggestions/recommendations for a somewhat healthier ice cream cake for my daughter's 1st birthday.  She isn't yet eating all things, so I don't think the cake will be to her liking.  So I thought I'd go with an ice cream cake, so that she could have the ice cream.  I'm trying to find something without polysorbate 80, rbst, and other additives.  Any suggestions in the Portland/Vancouver area?

  • This is making me laugh.

    I know that Piece of Cake in Sellwood makes vegan cakes, I would assume those don't have excess chemicals in them.

  • You could make your own by slicing store bought organic ice cream and layering it. We did homemade mini ice cream cakes for my baby shower, and they turned out very cute :)
  • I agree that homemade might be the way to go so you can control all ingredients, however, I think Ben & Jerry's keeps their products pretty chemical free.  Honestly, the girls barely ate any of their first birthday cakes.  They were much more for photos.  Their cakes this year came from Pastry Girl, and they were awesome -cute and delicious and rather affordable.

  • Thank you all for the suggestions.  I hadn't thought of making my own ice cream cake.  Now I'm thinking of the possibilities.  Smile

  • Yeah, like I said, I sliced the ice cream to layer it, but you could also soften it a bit so you are able to spread it before re-freezing. It's a time consuming job, so hopefully you are able to find something you can purchase.
