Need some healthy quick and easy lunch ideas

Trying to eat something besides a balance bar for lunch. TIA!

  • Today I made this salad for DH and myself.  Mine was 414 calories total and I could hardly finish it all.  It had 27 grams of protein from the lean chicken & black beans.  I'll list all the ingredients below the pic.

    Romaine lettuce
    Spinach leaves
    1 lean chicken breast filet (baked)
    Black bean (canned)
    Corn
    Salsa for the dressing

  • i love lean cuisines or WW frozen meals- add a side salad and/or piece of fruit.

    PB&J sandwiches with an apple are a big favorite of mine too.  I also eat deli meat - chicken/turkey with cheese- you can heat them up too if worried. 

  • My "go-to" almost every week is a quinoa salad.  I make a huge bowl of it on sunday or monday and eat it all week.  Cook up as much quinoa as you would like, then I add in whatever I am in the mood for... blackbeans, chick peas, olives, feta, corn and tomatoes all seem to hold up well for a few days in the fridge... I mix it all together in a big bowl... add fresh lemon juice, olive oil s&p and usually some fresh parsley or basil.  It is so filling by itself... to switch it up I even scoop some over mixed greens and add a little balsamic dressing... it's delicious!
