green pepper question inside

I just cut open 4 peppers for dinner. They were all bought on Thursday.  I've just cut the tops off (stuffed peppers on the menu- yum!) After I took the seed chunk out, I saw that the flesh that the seeds are attached to is noticably pink. Then the part on the inside of the pepper that you trim off is kind of spongey....

My question... is it normal/ok?  Can I eat them still or should I have dh run to the store quick to get me new peppers?  I'll be taking these back if I have to get new ones.  They were $8!

  • They should be fine I have eaten ones like that before.   As long as they don't look bad otherwise.
