Since we are having a summer baby (May), I don't think we need the infant one, but what about the toddler one? Would it be useful at 6 mos (when I assume the baby will be in the toddler seat for our stroller)?
Are these pretty universal for all strollers or should I get the Uppababy Footmuff for our stroller (we are getting the Vista)? Is one version better than the other? I see a bunch by JJ Cole that vary in price from $40 to $80. Just curious if any one comes more highly recommended than another?

You definitely won't need anything in the summer, other than maybe a light blanket. If you do get something for winter, be sure to get the style that goes over the baby and not underneath - putting anything between baby and the car seat harness is dangerous because it causes slack in the harness and the seat may not function properly. I live in Maine and find a light fleece on DD and a blanket over her is enough for just going back and forth to the car.
We have the JJ Cole Urban Bundle Me in the toddler size for our Uppababy. It fits great and I really like it. I looked at the heavier versions (the Arctic, I think?), but I went with the Urban because it seems more 3-season. It's light enough to use on it's own in the fall and spring, and in winter we put DD in a snowsuit and layer in a blanket if it's really cold.
I think I got it on sale at Amazon for $45. They are also on sale through Gilt sometimes.

I'm getting one for each season to go on the car seat, (which are universal)... the Canopy for summer, the BundleMe Lite for spring/fall, and the BundleMe for winter. I figured since he will be in the same car seat for probably the first year, I'm not too worried about the stroller for now. However, you do make a good point about being in the toddler seat in the stroller at 6 months....now I'm rethinking the winter one....
I did get one of those weatherproof blankets that can tie onto both the car seat and stroller from BabySteals, (they don't have them in the archives anymore but the brand name is Rosk if you're interested).
I use a toddler Urban BundleMe with my DD in her stroller, and it's great for fall, winter and spring. You definitely won't need anything for summer.
As far as I know, they fit pretty much every stroller out there. Oh, and yeah, I'd just get the toddler size because they grow out of the infant size really quickly.
ITA with Superned...the car seat techs told us not to use the JJ Cole products in the car seats. If you want more info on that the videos are available on the NHSTA website and carseat.org. This applies in US and Canada. Try looking for a good shower cap style, there are lots out there and it's much like putting a blanket on them.
I have one called Baby Parka, rated to -40C(which is -40F apparently). It fits my Graco Snugride 35, and has a lot more room than the Jolly Jumper Sneek a Peek (and I've had one of those, it was fine, this is definately warmer). I'm pretty sure this one would fit a convertible car seat too (I could run outside and check..) and it definitely fits a larger baby, I tried it on my 9m old neice, she had lots of room, and so does my dd who is 20 lbs and 27 inches. I've also had dd in it at -15C/5F and had to take off her thin fleece jacket she was sweating so hard.
