help me bake a cake

FIL's bday is next week and they are coming over for dinner this weekend.  DS and I were going to make a cake and I wanted to do something different than a box cake.  I gave up choc for Lent, so it can't have choc in it......I wanna eat some too!  I was thinking pineapple upside down cake, but I'm looking for other ideas.  Anyone have a delish cake recipe that they love that isn't too labor intensive?

  • I make a really yummy mandarin orange cake.  It's my family's favorite and super easy.  You serve it cold and keep refrigerated.

    One yellow cake mix
    Standard ingredients on cake box
    Two small cans or one large can of mandarin oranges, drained
    Mix all together with hand mixer.  The oranges will break up with the mixer.  Bake as directd on box.

    Frosting:
    Standard size cool whip
    Small package instant vanilla pudding (powder only)
    Can of crushed pineapple, not drained
    Stir all together.  Let cake completely cool, and frost.  You can make this as a 9x13, two rounds, or a bundt.

  • I have the most wonderful carrot cake recipe with a cream cheese icing. Its so delish! My Mom is a total carrot cake snob, and loves this cake more than any she's had, her fav use to be servatti's.

  • I havent made this yet but someone posted this on facebook not that long ago (sprads maybe?) and it is in my pile of recipes to try next time I need cake for anything...It looks kind of similar to the cake doodlebug posted above.

  • I just made the most delicious cake for DH's birthday a few weeks ago.  Its an Italian Cream Cake and it was AMAZING!  If you like nuts and coconut, then you definitely need to try it.  Its dense like a carrot cake.

    cake:

    2c sugar

    1/2 c shortening

    1 stick butter

    5 eggs separated

    1 c buttermilk

    1 tsp. baking soda

    2 c flour

    1 1/4 cup coconut softened with a touch of milk or coconut milk

    1tsp vanilla

    1 c. chopped pecans

    Cream sugar, butter, and crisco.  Separate eggs and add yolks one at a time.  Fold baking soda into buttermilk.  Alternate adding the buttermilk mixture and four.  Add coconut, vanilla, and pecans.  Fold in beaten egg whites.

    Bake at 325 for 25-30 minutes.  MAKES 3 LAYERS!!!!

    frosting:

    8 oz cream cheese

    1 stick butter

    1 tsp vanilla

    1 box powdered sugar

    Cream together until well mixed.

  • My mom makes this one and it is AWESOME, really light and fluffy too.  She calls it Angel Lush cake (don't know where that came from).

    ANGEL LUSH CAKE
     
    1  4-oz pkg. sugar free vanilla pudding
    1  20-oz can crushed pineapple in juice, undrained
    1  cup thawed Cool Whip
    1  round angel food cake (10 oz)
    10 fresh strawberries
     
    Mix pudding mix and pineapple w/juice in medium bowl.  Gently stir in whipped topping.  Place bottom cake layer, cut side up, on serving plate; top with 1-1/3 c. of pudding mixture.  Cover w/middle cake layer and additional 1 cup of pudding mixture.  Top w/remaining cake layer and spread w/ remaining pudding mixture.  Refrigerate at least 1 hour.  Top w/strawberries just before serving.    Store leftover cake in refrigerator.
