meatless meals

I finally have DH on a meatless meals kick (ironically because we need to save $$ for a grassfed cow we're buying this month, but it's the first time he's ever agreed).

I need some ideas for meals where he won't miss the meat to try to get this to be a more long-term change :) I'm also in need of getting out of our freezer-meal rut without breaking the bank...

He's pretty picky- he hates tomatoes and anything with tomato in it and doesn't do stir-fry either...

    I made a pretty killer asparagus & portabello quiche last week too because we had a ton of eggs in the fridge :)

  • Does he do tomato sauce?  Just not chunky tomatoes?  If so - pretty much any type of pasta bake.  Lasagna, baked ziti, baked spaghetti, etc.

    Pasta primavera

    Black bean tacos w/ slaw

    Black beans & rice

    Lentil soup

    Grilled, marinated veggie kabobs

    Polenta

    Stuffed portabellos

    Twice baked potatoes & salad

    A lot of times I just thumb through recipes, find something that looks good, and make it sans-meat.  Pastas, rices, casseroles, soups, etc. are really easy to do that with, and B never complains about the lack of meat in them.

  • What about tomato sauce? I made spicy kale lasagna last night and it was awesome. Very filling because of the cottage cheese and kale.

    Spicy bean burritos are great. I add pico de gallo to ours, but you could always just do guacamole or figure something else out (we do both, along with lettuce, scallions and cilantro lime rice).  DH loves them and says he doesn't miss meat in them at all.

    I like to make mushroom stroganoff (I go off of this recipe but use about 1.5 pounds of sliced mushrooms instead of the beef and just adjust the liquids slightly) and homemade mushroom pizza. Mushrooms are pretty filling and a great substitute for meat. Sometimes I make this mushroom pizza but DH doesn't like it as much as DD and I do, so I generally make a mushroom pizza with red sauce.

    Love broccoli cheddar soup. I always serve it with some kind of bread for dipping.

    This spicy taco chili is awesome with meat or without. Sometimes I will sub in more beans for the beef. Still has a fabulous flavor, is filling and makes a lot of leftovers.

    Also love Southwestern egg and black bean skillet.

    lol - I understand.  B is also very picky.  S will eat anything, but B is the one who gets all whiny about food!

  • I can't help much but to say I just ordered my side of beef today! EEEEE! I went out to the ranch and even picked it out!

    We do a lot of beans and rice type dishes, collard greens and grits, black eyed peas and limas, etc. (LOL, southern much? Perhaps this plan would not work in other parts of the country.) Sometimes I'll add a bit of local spicy sausage for flavor, butit's more as a garnish and to add some fat to the beans.
